Our winery constitutes a pioneering and exemplary project, achieved thanks to the tenacity of its creator, Lidio Nieto Jiménez, who knew how to add different plots to gather the 40 hectares of vineyard on that surround the building. In some areas the traditional head training is respected, while the previously vacant land, the trellis system has been chosen, more suitable for new technologies and healthier for the vineyard.
The modern facilities are made to optimize the processes. In each step, vinification is carried out with the rigor that wine deserves, people involved in its elaboration and the final consumer.
Production is focused on our ingenious varieties, garnacha for reds and albillo real for whites, completed by a small plantation of tempranillo. After a selective harvest, which is carried out at the optimum moment of ripening and in the coolest hours of the day, even at night, to prevent the heating of the grapes from raising the sugar content, the aging is carried out in wood barrels of different volumes and oaks American and French. Finally, the wines complete the process in the bottle, being stored in racks, which add complexity and structure to the wine.
The result are wines that express the personality of the terroir and are kept in our cellar until released, a cellar with soul.
As exciting as tasting a wine is learning about its production process and the people involved in it.
